I loved tonight’s dinner! I had a whole wheat turkey wrap + baby carrots + 2T spinach & artichoke hummus. I was craving hummus so badly so I incorporated it in my dinner. So yum. I’m thinking about a kiwi for dessert.

INGREDIENTS:

1 head cauliflower, large (7” - 8” wide)

1/4 cup egg whites

1/2 cup + 3/4 cup (for topping, optional) Mozzarella/Tex Mex cheese, shredded

1 tsp Italian herb seasoning or any dried herbs like rosemary, basil, parsley

1/4 tsp freshly ground black pepper

Pinch of salt

Marinara sauce for dipping

1 mashed banana, half a big avocado, chia seeds, 1 tablespoon agave, 1 1/2 tablespoons unsweetened cocoa powder, 1/2 teaspoon vanilla extract and a splash of (oat)milk.
