Vegan Fried Potatoes with Veggies
Ingredients:
Small white & red potatoes
Broccoli
Carrots
Garlic
Celery
Salt & Pepper (lots!!)
Onion Powder
Cayenne peppers
Olive Oil
Instructions:
Chop potatoes into small quarters. Over medium heat, place 2 tablespoons of olive oil into a large frying pan. Add potatoes, stir occasionally. Chop carrots & celery and add to pan. Add chopped broccoli, garlic, salt, pepper, onion powder, & cayenne peppers to the potato mixture. Add a small amount of water to the pan if the mixture is sticking. Fry until potatoes & veggies are soft.
